Jangsu Bossam. Won Bossam. Won Sikdang. These are just a few of the names this humble eatery has garnered over the years, a testament not only to the great food that’s served but to the hardworking, slightly hard-nosed halmoni who runs the show here. Open for over 30 years in the Jongro district, Jangsu Bossam serves the most delicious bossam in all of Seoul, which is evident by their regular customers and food-lovers who have no qualms about waiting in line for a fabulous meal.
As to date, I’ve been here a handful of times during summer and I’m still marveling how the halmoni perfected her own style of bossam: a gorgeous pile-up of melt-in-your-mouth pork pieces and an equally impressive mountain of geotjeoli kimchi (freshly-made kimchi). The kimchi is excellent, which is more on the fresh, funky side than being overly sweet. I learned later that the genius halmoni doesn’t use any sugar or sweeteners, a big plus in my book. This seemingly simple combination is so addictive that I had two meals here in one day. Bossam baekban (10,000 won) is their main attraction, but the menu is extensive enough to please the pickiest of people by serving several types of soups/stews, noodles, and bibimbap.
