Here is another meat dish coming in at #4 on the Korean Top Ten. Of all the popular meat dishes, kalbi (barbecue short beef ribs) remains the favorite among foreigners and Koreans for its savory sweet flavors and tender meat from the long marination. Since it is usually grilled over fire or charcoals, you will hear the name kalbi gui (meaning “grilled”) interchangeably. The flavorful marinade combines the base ingredients of soy sauce, garlic, and sugar, but variations differ according to region and taste preference. After “experimenting” with it for a while now, we personally include pureed pears or apples, honey, sesame oil, and red pepper paste (gochujang). When grilling the meat, be sure to cook on medium to high heat to sear in the flavors, or you can add the marinade sauce to bring added taste as well. Lastly, these cuts of meat are pretty expensive so they are usually served on special occasions or holidays, which ultimately make them more appealing when you do get your share.
